Serves 2-4
- 2 medium sweet potatoes
- 3 sprigs of thyme
- 1/4 cup parmesan cheese
- 2 tbsp olive oil
- 2 tbsp truffle oil
- salt and pepper
Preheat your oven to 200º C.
- Cut the sweet potatoes into long, thick fries.
- Toss the fries in a bowl with olive oil, thyme, salt and pepper until evenly coated.
- Bake the fries on a cookie sheet for 20-30 minutes until golden at the edges.
- While hot, finish the fries with truffle oil, parmesan and some salt.
Serve hot and enjoy!
*for anyone who is not a fan of truffles, just top with some fresh olive oil.
