The Ultimate Sweet Potato Wedges

This recipe is a favorite of mine. Perfect as a snack or side! x

Serves 2-4

  • 2 medium sweet potatoes
  • 3 sprigs of thyme
  • 1/4 cup parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp truffle oil
  • salt and pepper

Preheat your oven to 200º C.

  1. Cut the sweet potatoes into long, thick fries.
  2. Toss the fries in a bowl with olive oil, thyme, salt and pepper until evenly coated.
  3. Bake the fries on a cookie sheet for 20-30 minutes until golden at the edges.
  4. While hot, finish the fries with truffle oil, parmesan and some salt.

Serve hot and enjoy!

*for anyone who is not a fan of truffles, just top with some fresh olive oil.
